Olive Oil in the past was stored in terracotta jars, while today, those who aim for quality, keep it in steel containers (which protect from LIGHT: the first enemy of oil ), in the absence of OXYGEN (second enemy of oil), and at a controlled TEMPERATURE 15-18 degrees (third enemy of oil).
